Mama Rose takes over the kitchen with a light strawberry mousse.
- 1 large tin canned strawberries
- 2 tins full fa cream
- 2 packets strawberry jelly
- 2 eggs (egg whites)
Start off by placing two packets of jelly in a pot over the hob, mixed together with the liquid / juice from the can of strawberries. Leave the pot over a medium heat until the jelly dissolves completely.
Meanwhile, crack open two eggs and separate the egg whites from the yolks. Whisk the egg whites until they peak and once peaked add in the tin of cream and mix together.
Once the jelly has dissolved and cooled down (make sure to let it cool) add it to the meringue / cream bowl and stir together with some of the strawberries. Leave this to set in the fridge overnight.
Finish off by decorating the mousse with the left over strawberries and serve! .
