Mama’s BBQ Ribs

Cooking Time: 1 Hour 20 Minutes | Serves: 3

Sticky BBQ ribs are the best! The messier, the better. Mama’s homemade BBQ sauce will have you appreciating every bite and drop and is even better with a side of homemade chips.

Ingredients

  • 1KG Pork Ribs
  • 400G Tomate Triturado (Passata)
  • 3 Tbsp Honey
  • 1 Tsp Ground Cumin
  • 1.5 Tsp Brown Sugar
  • 100ML Olive Oil
  • 2 Garlic Cloves
  • Pepper
  • Salt
  • 80 ML Soy Sauce
  • 2 Tsp English Mustard

Method

On electric mark 3, heat the oil, crush the garlic whole and brown them in their skin, remove the garlic from the pan once tender, and squeeze out of the skin. Mash this into a puree and add back to the pan with the other ingredients. Except for the meat.

Simmer for a few minutes, lay the spare ribs out in an oven dish, score over the top with a sharp knife  and pour the sauce over them.

Transfer to an oven at 150°C for 1 hour and 20 minutes, making sure they are tender, the edges are crisp. The sauce will thicken.
