- 3 med Potatoes with skin
- 1 small finely chopped onions
- 1/2 a tin corned beef
- 1 boiled egg
- 1 oxo cubes
- 1/2 cup water
- 1 grated garlic clove
- 1/4 cup moroccan oil
- 1 egg yolk
For 2 persons
1, Boil 3 med Potatoes with skin
2, Cut in half and gentle Scoop the inside and mash with butter, milk and salt – leave the shells to one side
3, Heat oil and sauté the garlic and Onion. Add the corned beef, crumble the oxo cubes and add the water. Stir and cook to reduce liquid. Salt and pepper
4, Fill the potato shells with above mixture. Cover with sliced boiled egg and then spread mashed potato. Brush top with beaten egg yolk.
5, Into preheated oven until golden in colour.
I sometimes add finely chopped bacon bits to the Corned beef Pie filling.
