Mama’s Fluffy Pancakes

PANCAKES! PANCAKES EVERYWHERE! It’s almost that time of year when you see your friends posting pictures of their pancakes and everyone is looking forward to pancake Tuesday. 

Because there’s going to be some serious pancake envy going on out there, we want you to have a heads up and give you all our sneaky little recipe for some super fluffy pancakes so that you can practice for that perfect pancake stack.

Ingredients

  • 3 eggs
  • 120 G Self Raising Flour
  • 150ml Milk
  • Salt
  • Hazelnut Chocolate Spread
  • Strawberries 

Method

1, Measure out and pour the flour, milk and a pinch of salt into a large bowl. Crack open three eggs and add in the egg yolks only. Don’t add the egg whites, keep these in a separate bowl.

2, Leave the mixture to one side and whip the egg whites into meringue peaks. The reason we do this is to get lots of air in our pancake mix to get them really nice and fluffy, just like we do with our cakes. Once they are fabulously peaked fold this into your flour mixture.

3, You now have the mixture ready to turn into yummy pancakes. Heat a small non-stick frying pan over a medium heat and using a ladle, pour one ladle full into the hot pan and leave for a couple of minutes. Shake the pan to check it’s cooked and flip over using a fork. Cook the opposite side for 2 more minutes and remove. The pancakes should be soft and fluffy with a golden outside.

4, Pile up your pancakes, this makes a stack of around 6. Heat up the chocolate sauce for 30 seconds and slice up some strawberries. Pour the chocolate over and lay some strawberries around.
