- 4ozs sugar,
- 6ozs golden syrup
- one third pint of milk
- 8 ozs. s.r. flour
- 1 teaspoon baking powder
- 1 egg (beaten)
- optional: sultanas or raisins
1. Set oven at 180 C.
2. Heat sugar, milk and syrup in a sacepan and stir gently until the sugar is dissolved. Allow to cool.
3. Sift the flour and baking powder in a bowl, tip the sugar syrup mixture onto the beaten egg and then pour into the middle of the bowl with the flour. Stir gently until smooth. Pour into paper cases and bake in oven for about 30 minutes.
4. Test by inserting skewer in the middle of one cupcake. You can decorate it with walnuts, almonds, whatever you prefer.
Have been making these since I was a teenager, they are lovely and sticky.
