Easy Creamy Pasta

Pasta is a great go-to dish. It was time to change it up from the usual pasta in tomato sauce so instead we roasted the vegetables and put a lot of cream cheese. This is a great dish if you want an easy creamy pasta, and you don’t fancy spending a long time in the kitchen on hot days.

Ingredients

  • 200g cherry tomatoes
  • Frozen vegetables or a selection of seasonal vegetables
  • 200g cream cheese
  • 1 tbsp paprika
  • 1 tsp basil
  • 1 tsp thyme
  • Salt
  • Black pepper
  • Olive Oil
  • Tagliatelle

Method

Chuck all the ingredients (except the pasta) into an oven dish and space them out. Cover with a very generous drizzle of oil and season with basil, paprika, thyme, salt and black pepper. Place the dish in the oven at 180C for about 25 – 30 minutes, until all the veg are soft and roasted (it depends on the oven and vegetables but ultimately you want them nice and soft). We want to give the tomatoes a nice charring.

Separately boil some pasta until al dente.

Once the oven dish ingredients are ready and the pasta is boiled, add the pasta inside the oven dish and cover all the pasta with the sauce, until its nice and smooth, so you end up with a creamy pasta dish.

Serve and enjoy.
