Strawberry Cream “Shortcake” Slices

Summer time and tennis means strawberry and cream season is here! Treat yourself and others to a tasty, messy shortcake dessert.

Ingredients

  • 500ml double cream
  • 1 packet (200g) oat digestives or malt milk biscuits. You could also try this with soft lady fingers.
  • 350g strawberries
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 110g Icing Sugar

Method

Kick off the shortcake recipe by rinsing and patting your strawberries dry. Slice them up and leave them to one side for the moment. Crush the biscuits and mix with the cinnamon.

Mix together the cream, vanilla and icing sugar and whip until light and fluffy.

Now grab a baking tin or oven dish and lay some greaseproof paper. Layer the ingredients with biscuits, cream and strawberries, repeating until you have at least 3 layers. Leave the dish in the fridge for a few hours to stiffen and set properly then slice up and serve.
