Personally, I’m a huge fan of coconut. So when it finally dawned on me that I was going to the Caribbean and would be surrounded by fresh, literally fall off the tree and onto my lap, coconuts and rum, I got a little excited.
Here’s a recipe for one of the cocktails I consumed on my holiday, made entirely of coconuts.
Tip: If you fancy this more like a slushie or even a bit sweeter add in some ice when blending together and a spoonful of sugar.
Ingredients
- 200 ML coconut cream
- 150 ML Coconut Milk
- White Rum
- Chocolate spread
- Desiccated Coconut

Method
1, Blend together the coconut cream, milk and 3 shots of white rum. I used Malibu as I enjoy it’s coconut flavour but you can use any you prefer.
2, Now use the chocolate spread to decorate the glass by swirling this around the inside.
3, Pour the coconut mixture into the glass and decorate with desiccated coconut.
Note: when blending, add in a couple cubes of ice for more of a frozen cocktail. If you find you prefer this a little sweeter, simply mix in a teaspoon of sugar.
