Ham and Egg Muffins


  • Deep muffin tin
  • 6 Eggs
  • Salt
  • Pepper
  • Sundried Tomatoes
  • Deli Ham
  • Grated Cheddar Cheese


Beat together the eggs in a large bowl, along with chopped up sundried tomatoes, cheese, salt and pepper.

Layer two ham pieces in a muffin tin to create a pocket and pour the egg mixture inside.

Place the muffin tin in the oven at 180C for 10 – 15 minutes to bake the egg.

When ready, remove the tin from the oven and sprinkle cheese on top. Take the muffins out of the pockets and serve.
