Choco Coco Bars (Vegan)

These light coconut bites are so delicate they just melt in your mouth and the melted chocolate coating makes this a decadent and indulgent tea time snack.

Serves: 4 | Cooking Time: 1 Hour

Ingredients

  • 130G Shredded Coconut
  • 1 Tbsp Powdered Sugar
  • 1 Tbsp Coconut Oil
  • 60ML Full-Fat Coconut Cream
  • Dark Melting Chocolate (Vegan)
  • Pistachios

Method

Start these off by combining the shredded coconut and sugar together, fold it over and stir it together with a spoon so that it mixes evenly. 

Now it’s time to add the wet ingredients, pour in the coconut oil and milk and mix together until you have a paste. Using your hands combine all the ingredients and shape into balls or bars. Lay these out on a baking parchment. 

Transfer the laid out parchment to the fridge and leave the coconut shapes to stiffen whilst you melt the chocolate. 

Slowly melt the chocolate until smooth and runny, add a tablespoon of coconut oil not the chocolate if you want it runnier.

Now remove the coconut pieces from the fridge and coat them in the chocolate but dipping them in between two forks. 

Crush some pistachios or your favourite nuts and sprinkle them on top.
